Small Food Processing Workshop

The Iowa State University Extension and Outreach Food Innovation and Business Hub, in partnership with the University of Nebraska-Lincoln, will hold an in-person, FDA-approved Better Process Control School (BPCS) Training in Ames, Iowa, Jan. 6–8, 2026. 

The training offers two course options for both those with a minimal food science background and experienced food processing professionals. Participants are encouraged to select the course option that best fits their needs and experience level. 

BPCS for acidified foods only: Jan. 6–7

This one-and-a-half-day school focuses on the safe processing and packaging of acidified foods, such as salsas, pickled vegetables and sauces. It is designed for those with little or no background in food science or food safety who want to better understand how to make shelf-stable products safely. Participants will be equipped with a scientific understanding of thermal processes and strategies of pathogen control, namely Clostridium botulinum.

Ideal for:

  • Supervisors or operators of acidified food processes
  • Individuals with little or no background in food science or food safety who need to understand relevant FDA regulations for acidified foods
  • Those working in facilities making foods such as salsas, pickled vegetables, sauces, etc., where the finished pH is ≤ 4.6 (acidified foods)

Full BPCS: Jan. 6–8

The full, three-day Better Process Control School covers both acidified and low-acid foods and provides a deeper understanding of safe food processing practices. Participants will learn about thermal processing, pathogen control and regulatory compliance to ensure the safety and consistency of shelf-stable foods.

Ideal for:

  • Professionals in food processing facilities who deal with acidified and low-acid canned foods
  • Individuals who require a deeper understanding of thermal processing, pathogen control and regulatory compliance
  • Supervisors or technical staff who must oversee or validate processes for low-acid and acidified canned food operations

Registration

Participants must register online to attend BPCS training. The cost to attend the Acidified Foods Only training is $350, while the full BPCS training costs $450. The trainings will take place at the ISU Digital Ag Innovation Lab in Ames, Iowa.
